Watermelon & Tequila Sorbet

This sorbet is wonderful for the beach or pool, add more tequila once you serve and you’ll have a boozey slushee to enjoy! Cheers!




Ingredients:

1/2 medium watermelon (3-4 cups)
1 cup sugar
1/4 cup fresh squeezed lime juice
1/2 cup water
Zest of 1 lime
2 tbsp silver tequila
1 tbsp triple sec
Pinch of Maldon sea salt or fleur de sel


Directions:

1. Cut the watermelon into chunks and place in blender and purée
2. Put stove on medium heat, add the water, lime juice, sugar and zest to a high sided pot and stir until sugar has dissolved into a simple syrup
3. Take the simple syrup and chill thoroughly
4. Once cooled, combine simple syrup and watermelon purée
5. Freeze mixture in your ice cream maker according to the manufaturer’s directions
6. Once completely frozen, mix in tequila, triple sec and salt
