Mojito Sorbet


Earlier this year we took a vacation that landed us in Puerto Rico. We love it there, especially in Old San Juan. We always end up at a particular hotel that is charming as can be and serves killer Paella and drinks. I can honestly say I have never been served a mojito like that in my life. A classic mojito usually consists of lime juice, mint, white rum, sugar and sparkling water, except Hotel El Convento served theirs with lemon juice and I was blown away! Here’s my recreation in a way that you can enjoy as a dessert. Cheers!


Ingredients:

3/4 cup fresh lemon juice
1/4 cup fresh lime juice
1 lime zested
1 lemon zested
1/2 cup fresh mint leaves (we use sweet mint)
1 cup sugar
2 1/2 cup water
3 tbsp white rum

Directions:

1. In a small saucepan add sugar, 1/2 cup water, 1/4 cup mint leaves, and zest of lemon. Heat on medium-low until sugar dissolves
2. Remove syrup from heat and add to separate bowl with the lemon juice, lime juice and the rest of the water
3. Let combined mixture steep for  2 hours in freezer and stir every 30 minutes
4. Once thoroughly cooled strain mixture and add the lime zest
5. Pour mixture into ice cream maker and freeze to manufacturer’s directions
6. Once mixture starts to freeze, mince remaining mint leaves and add to freezing mixture. At the end mix in the rum

*We like to scoop into fun glasses and serve with more rum to make a frozen mojito!
