Lime Ice Cream Sandwich

This to me screams Key Lime Pie, and while you don't need to use key limes you get the gist. Put this tart lime ice cream between 2 oatmeal cookies and you've got yourself a fun summer treat that beats the chocolate and vanilla ice cream sandwiches from the grocery store! Cheers!




Ingredients:

3 cups whole milk
4 limes zested
1/4 cup fresh lime juice
1/2 cup sugar
1/2 tsp powdered gelatin
2 tbsp cold water
2 of you favorite oatmeal cookies

Directions:

1. In a medium saucepan on medium-low heat add milk, lime zest, lime juice, and sugar. Cook until sugar has dissolved. Remove from heat and let rest for 1 hour
2. Once rested, put saucepan back on stove on low heat. Meanwhile bloom your gelatin in a small glass (take your powdered gelatin and sprinkle it over the cold water and let sit for 3-5 minutes)
3. Once bloomed, whisk your gelatin into the saucepan and make sure everything has dissolved
4. Pour your mixture into your ice cream maker and follow the manufacturer's instructions
5. Once ice cream has frozen place in freezer for at least two hours. Once frozen solid, place a scoop of ice cream between your favorite oatmeal cookies!
