Mango & Chili Lime Popsicle

My sister and I love mango, in fact my whole family loves mango (even the dogs). There is something about tropical fruit during the summer that makes everyone ecstatic and when you get a ripe mango and bite into it (and the juice drips down your arm), that's when you've hit pure happiness. When we can't get the fresh fruit we buy the dried mango from Costco or Trader Joe's, the dogs LOVE it (we call it their crack and I swear they go nuts). If you've ever seen any tropical travel show they feature a lot of the local foods and majority happen to share a street food that became famous: Mango on a stick with Chili Lime Salt. It's incredible, so I thought I'd make my own rendition! Cheers!




Ingredients:

2 fresh ripe mango, peeled and diced
2 limes zested
2 limes juiced
1/2 tsp chili powder
1/2 cup sugar
1 3/4 water

Directions:

1. In a medium saucepan, set on medium-low heat, add sugar, mango, lime zest, chili powder and 1/4 cup water. Cook the mango down until very soft, 10-15 minutes. Remove from heat and let it come to room temperature
2. Once cooled, add mixture, lime juice and remaining water to blender and blend on high until smooth
3. Pour mixture into popsicle molds and freeze them (standing up) for at least 4 hours. If you don't have popsicle molds, freeze in your ice cream maker following manufacturer's instructions to make sorbet!
