Matcha Ice Cream

As I've said in the past, I love to use teas for my infusions and with everyone on a kick of Matcha, what better excuse than to turn it into ice cream (plus my coworkers were pushing for it)! The flavor resembles green tea bubble tea and always reminds me of our favorite Pho place! Our Septembers are still REALLY hot so it's a perfect refreshing treat. Cheers!



Ingredients:

4.5 grams Matcha powder
3 cups whole milk
1/4 tsp vanilla extract
1/2 tsp gelatin powder
2 tbsp water
3/4 cup sugar

Directions:

1. In a medium saucepan on medium-low heat, add milk, Matcha powder, sugar, vanilla extract and heavy cream. Whisk mixture constantly until powder and sugar have dissolved fully. Remove from heat
2. Bloom your gelatin in a small glass (take your powdered gelatin and sprinkle it over the cold water and let sit for 3-5 minutes)
3. Add bloomed gelatin to saucepan and whisk until gelatin has dissolved
4. Pour mixture into ice cream maker and freeze follow manufacturer's instructions
