Salted Chocolate Posset

Another delectable treat coming to you for this weekend, now we are on to chocolate. As the posset obsession continues I give you salted chocolate posset! Think of it like a chocolate tart, sans crust! Cheers!



Ingredients:

3.5 oz 80% chocolate
1/3 cups sugar
1 cup heavy cream
1/2 tsp fleur de sel

Directions:

1. In a bowl break up the chocolate and melt fully in microwave or over a double boiler
2. In a high sided saucepan add sugar and heavy cream
3. Whisk mixture until it becomes thick (6-8 minutes) then add melted chocolate and 1/4 tsp salt. DO NOT leave your pan, it is important you keep whisking as the mixture will bubble up. If it does bubble up to the edge of your pan, remove from heat and let bubbles settle
4. Once mixture has reduced pour into  a bowl or Pyrex with a spout
5. Pour into two glasses or short jars, sprinkle remaining salt over top and place in refrigerator for 3 hours to cool completely!
