This is an edition of what to mix in with your vanilla ice cream. Honestly you can put anything into an ice cream as long as you have a good base; so this time I decided to use the rest of our Girl Scout Cookies that were in the freezer and turn them into an even more sweet treat. Here you have Thin Mint Cookie Ice Cream! Funny enough, it's incredibly satisfying with the slight hint of vanilla and the cookies eventually become soft which makes it more of a cookie and cream dessert. Cheers!
Ingredients:
1 sleeve of Thin Mints
2 cups heavy cream
1 cup whole milk
3/4 cups granulated sugar
1 tsp vanilla extract
pinch of sea salt
Directions:
1. In a medium saucepan on medium-low heat add 1 cup heavy cream, milk, sugar and vanilla extract. Let the mixture come to a simmer and the sugar has completely dissolved
2. Remove from heat and pour into remaining heavy cream
3. Cool in refrigerator for 4 hours until completely cool
4. Once cooled, pour mixture into the ice cream maker and freeze using the manufacturer's instructions
5. While mixture is freezing, chop your cookies into the desired size
6. At the end of the freezing process add your cookies to the ice cream as well as your salt. Make sure everything has incorporated and serve!!
