Caramel Apples


I LOVE caramel apples, and if it weren't for the fact that I'd rip my crown out, I'd make them a lot more often. Perfect for any party you throw, these are a wonderful dessert that anyone at any age will enjoy! Want to make it adult? Add a tablespoon of bourbon during step 6. Cheers!


Ingredients:


6 small granny smith or lady apples
1 1/3 cup granulated sugar
1/4 cup corn syrup
1/4 cup water
1 cup heavy cream
5 tbsp. salted butter
Any candy or topping you want to decorate your apple
6 popsicle sticks or thick skewers

  
Directions:


1. Wash and dry your apples. Make sure they are completely dry, otherwise your caramel will slide right off. Stick your popsicle stick in the middle of each apple
2. In a high-sided pan on medium-high heat add sugar, corn syrup and water. Let it sit for 10-15 minutes and let the sugar come to a deep amber color. Watch this very carefully, if you walk away it will burn
3. While waiting for the sugar to caramelize, in a small saucepan on medium-low heat add your heavy cream and butter. Let butter fully melt
4. Once sugar has come to a deep amber color, take your metal whisk and start to stir the mixture. With your face back from the high-sided pan, slowly pour your heavy cream mixture into the caramel. It will steam up so be VERY careful
5. Whisk vigorously and turn heat down to medium
6. Place your candy thermometer in your pan and keep stirring until your temperature has reached 250 degrees Fahrenheit. Remove pan from heat 
7. Let caramel cool to 165 degrees Fahrenheit and dip your apples making sure they are completely covered with the caramel. Drain for a couple of seconds and place on a parchment lined cookie sheet.
8. Sprinkle on whatever toppings you want. Let sit for at least 1 hour before you enjoy!
