Lavender & Honey Ice Cream

A couple of years ago I visited one of my closest friends in Dallas. I LOVE going to visit her, it's non stop eating, laughing and acting like kids again. The last time I was there we hit a bunch of places, but made sure that our number one stop was Steel City Pops. It's eclectic and delicious and we end up visiting the shop again and again every time I visit. 

While they have a great mix of flavors, we hit up a few other ice cream stores around the area which is what inspired this ice cream. The second we walked into Milk & Cream I nearly started jumping up and down because HELLO, lavender soft serve ice cream. Just me? Well this may just change your mind. Lavender, not just for potpourri... 

It was an incredible ice cream, so I decided to make my own version. It has taken me two years to get this ice cream just right so let's hope you enjoy it. Cheers!





Ingredients:

2 tbsp edible lavender buds
2 tbsp good honey
1/4 tsp vanilla extract
3/4 cup sugar
2 cups heavy cream
1 cup whole milk
1/8 tsp Maldon Sea Salt
1/2 tsp gelatin powder
2 tbsp water

Directions:
1. In a medium saucepan on medium-low heat add lavender buds, sugar, vanilla extract, honey, milk and 1 cup heavy cream. Whisk until sugar has dissolved and remove from heat. Let steep for 10-14 minutes. Lavender has a very strong perfume flavor, so it's very important not to over steep, if you like the stronger flavor go for the 14 minutes
2. Once mixture has steeped, strain and add back to saucepan. Place saucepan on low heat and add remaining heavy cream
3. Bloom your gelatin in a small glass (take your powdered gelatin and sprinkle it over the cold water and let sit for 3-5 minutes)
4. Add bloomed gelatin to saucepan and whisk until gelatin has dissolved
5. Pour mixture into ice cream maker and freeze following manufacturer's instructions. Towards the end sprinkle in your salt
