Moscow Mule Posset

My fiance's favorite drink on a Friday night is a Moscow Mule, and I can't agree with him more. The spicier the ginger beer, the better. We're in the middle of our busy season and can't ask for a drink fast enough so this time around I decided to turn it into a fun dessert. It's tart, zingy and will impress any of your weekend guests. Ingredients:

1 lime zested
3 tbsp fresh lime juice
1 tsp vodka
1/2 tsp fresh grated ginger
1 cup heavy cream
1/3 cup granulated sugar

Directions:

1. In a high-sided saucepan on high heat add zest,vodka,grated ginger, sugar and heavy cream
2. Whisk mixture until it becomes thick (8-10 minutes) and has reduced to 1/2 cup. DO NOT leave your pan, it is important you keep whisking as the mixture will bubble up. If it does bubble up to the edge of your pan, remove from heat and let bubbles settle
3. Once mixture has reduced, strain through a fine mesh sieve into a bowl or Pyrex with a spout
4. Add lime juice and whisk. Pour into two glasses or short jars and place in refrigerator for 3 hours to cool completely. This goes great with a crisp ginger cookie!
