Apple Crumble

The hardest park about baking for me is the fact that I am really only baking for two people at a time (including myself). A lot of recipes out there are for at least 4 people and unless you want leftovers, it can be a real waste. This is where apple crumbles come in! Depending on the amount of apples used, you can make anywhere from one to an infinite amount! For this recipe, as long as you have a small casserole dish or individual pots, you are all set on the portion control front! This recipe only requires two medium-large size apples, nuts right? Perfect for any date night in, this dessert will have you wishing for more! Cheers!


Ingredients:

Crumble topping (makes a ton, but freeze in a Ziplock for later so you have it ready for your next treat):

1 tbsp ground cinnamon
1/2 tbsp ground ginger
1/2 tsp allspice
1/2 cup brown sugar
1/2 cup turbinado sugar (or white granulated)
1/2 cup all purpose flour
pinch of salt
2 sticks cold unsalted butter cubed

Apple Filling:

2 medium-large baking apples
1/2 tsp ground cinnamon
1/4 tsp grated fresh ginger (optional)
2 tbsp turbinado sugar (or brown sugar)
2 tbsp all purpose flour
1/2 lemon zested
1/2 lemon juiced

Directions:

1. Preheat your oven to 400 degrees Fahrenheit
2. In a large Ziplock add all of the crumble topping ingredients and mix well. Mash some of the butter with your hands to combine. Place in freezer for it to harden again (skip whole step if you already have crumble topping made)
3. Peel your apples and slice them into chunks
4. In a medium bowl add your chopped apples, cinnamon, ginger, sugar, flour, lemon juice and zest and mix well
5. Transfer the apple contents to a small dish or individual pots
6. Take your crumble topping out of the freezer and add enough to cover the top of your apples (I usually go to town)
7. Place in oven and bake for 20 minutes
8. Remove from oven and let your dessert cool slightly so you don't burn yourself!!
9. Serve with ice cream and enjoy!! Try these three: Rum Raisin , Apple Pie Spice , Salted Caramel
