Acai Bowl

Happy New Year! If you're looking to get back into the swing of things and have decided to go for a healthier you, bravo! I'm in the process of doing so myself, and what I have been stuck on lately is a smoothie in a bowl with plenty of antioxidants and protein powder, but this does not replace my love for ice cream! 

While this treat is meant for a higher calorie day, this can feed two people (or a very hungry person, guilty on many occasions) and is still incredibly satisfying and holds you (or at least me) to your next meal. Mix anything you want in it, you can't go wrong! Cheers!



Ingredients:

Unsweetened Acai pack* 
1 tbsp chocolate hazelnut spread (optional)
1 tbsp unsweetened coconut flakes
1 scoop unflavored protein powder or collagen peptides
1/4 cup coconut water or regular water
1/3 cup blueberries

Toppings I like to add:

Unsweetened coconut flakes
Nutella/ chocolate hazelnut spread 
granola
chia seeds
strawberries 

Directions:
1. Run the Acai pack under hot water for 30 seconds in order to break up the frozen pack to help your blender run more efficiently
2. Add all ingredients to the blender and blend until smooth. You want the consistency to stay thick so you can eat it with a spoon, otherwise you'll get a smoothie. If you do want a smoothie simply add more coconut water to the blender!
3. Serve with your favorite toppings!


*I like the Sambazon Protein or unsweetened packs, this can be found at most grocery stores. Trader Joes's also has their own unsweetened packs that are delicious! All fall within 100 calories.
