Lychee Sorbet

Lychee is one of those fruits that you used to only really see in Asian restaurants, usually in bubble tea form. Only now do our American grocery stores carry the fruit and while they do look a little weird it’s so worth it to grab as many as you can. If you can’t find it at your local store any Asian grocer has them! Cheers! 



Ingredients:

21 lychee 
1 cup sugar
1 cup water
2 tbsp silver rum 

Directions:

1. Peel lychee, remove pith and add the fruit to saucepan on medium heat with sugar and water
2. Cook mixture for 10 minutes until sugar has dissolved. Remove from heat and let it come to room temperature (otherwise you will get an explosion, believe me sticky everywhere)
3. Once cooled pour mixture into blender and blend on high until mixture is smooth. Strain mixture
4. Freeze mixture in ice cream maker following manufacturer’s instruction, add rum towards end of freezing process for easy scooping later
