Pitaya, or dragon fruit, is a superfood that is high in vitamin C, fiber and antioxidants. It's an exotic fruit that has hot pink skin and a sweet center. As I was recipe testing, I found that lemon zest complimented the fruit best, and it created a cheery sorbet with a bit of a crunch from the seeds. Ingredients:
2 dragon fruit peeled and diced
1/2 cup sugar
1 lemon juiced
Zest of 2 lemons
1 cup water
3 tbsp rum
Directions:
1. In a medium saucepan on medium heat, add diced dragon fruit, sugar, lemon juice, zest and water and cook down fruit (about 10-15 minutes).
2. Break up the heated fruit more by mashing it down as much as you can. Remove from heat and add remaining water and rum. Let it come to room temperature
3. Pour mixture into ice cream maker and freeze following manufacturer's instructions
