Happy Halloween: Peanut Butter & Chocolate Ice Cream

Happy Halloween! In honor of this candy-filled day, how about a peanut butter and chocolate ice cream to satisfy all the Reese's loving kids and adults out there!! I have a date tonight with my favorite furry creature, boyfriend, a spooky drink and Hocus Pocus. Cheers! 


Ingredients:

3 tbsp creamy peanut butter
3 tbsp peanut butter powder
3/4 cup granulated sugar
2 cups heavy cream
1 cup whole milk
5 egg yolks
1 bar of your favorite semi-sweet or milk chocolate shaved (use your vegetable peeler to shave off the pieces)
2 sandwich cookies (I made a simple chocolate chip cookie with Reese's Pieces)

Directions:

1. In a medium saucepan on medium heat add the peanut butter, peanut butter powder, sugar, 1 cup heavy cream, milk
2. Mix until the sugar and peanut butter have dissolved. Remove from heat and let cool for 20 minutes 
3. In a separate bowl whisk together egg yolks. Slowly pour some of the warmed mixture into the yolks and whisk 
4. Pour yolk mixture back into saucepan and stir custard until it becomes thick and reaches 165-170 degrees Fahrenheit 
5. Strain custard mixture into remaining heavy cream and let it cool in the refrigerator for at least 8 hours or overnight
6. Once custard has cooled, freeze in ice cream maker following the manufacturer's instructions
7. Towards the end of the freezing process add the shaved chocolate. Place ice cream into a container and put in freezer for at least 2 hours if you want to make it an ice cream sandwich, if not, serve in your favorite glass!
