Pomegranate & Chocolate Chunk Sherbet

It's pomegranate season, which means I'm at my local Costco every weekend getting flagged for the Executive Membership because I show up too much. It's worth getting bombarded by Membership even though you have to sit and explain why the only thing I want are pomegranates and no, I don't need their credit card because we don't need 500 bags of trail mix or TP to last us years. Anyway, if you're unfamiliar with pomegranates they are pinkish-red fruits the size of a softball, when cracked open, spill out a ton of jeweled seeds. It's a great treat, full of antioxidants (3x more than red wine), and I wouldn't have known that had my long time friend not introduced me to them back in high school. If you love the seeds as much as I do SKIP the POM Wonderful pre-peeled containers and do it yourself. A. it's cheaper and B. you get more out of it. Don't worry though, for this recipe you won't be sitting there trying to peel a ton of the fruits, however this is when the POM Wonderful juice comes in. Good for anything from ice cream to martinis, this juice will be your new best friend. Cheers!



Ingredients:

2 cups POM Wonderful 100% Pomegranate Juice
3/4 cup whole milk
1/4 cup heavy cream
1/4 cup sugar
2 tbsp vodka
1/2 bar of dark chocolate chopped into chunks

Directions:

1. In a medium saucepan on low heat add milk, heavy cream and sugar. Stir until sugar has dissolved
2. Pour milk mixture into your pomegranate juice and stir
3. Add mixture to ice cream maker and freeze following manufacturer's instructions. Once mixture starts to freeze add vodka and chocolate chunks, mix well
