Praline Pecans

I think I've said it before, but if i could make ice cream every day I would. As much as I want to live in that dream land, I have a day job and rent to pay so weekends are meant for baking...and the occasional lunch break when working from home. 

My biggest audience? Our friends that come over every Friday night for dinner and dessert which usually consists of either cookies or ice cream. When I'm short on time these are the next best thing. Perfectly spicy and sweet and inspired from a favorite cookbook, you won't go wrong! Also, a great accompaniment for any aperitif! Cheers! 



Ingredients:

8 oz raw pecans
1 1/2 tsp cinnamon
1/2 tsp cayenne
1/2 cup granulated sugar
1/4 cup water
1 pinch of Maldon sea salt

Directions:

1. In a skillet on medium-high heat add pecans, sugar, and water. Mix thoroughly so all pecans have been covered
2. Add cinnamon and cayenne and mix constantly. The cooking process moves quickly and you don't want anything to burn so keep mixing and make sure everything is incorporated
3. The pecans will start to become sandy after 3-5 minutes, make sure all of the mixture stays sandy and remove from heat. Pour contents onto a parchment lined tray or silicone liner
4. Sprinkle sea salt over pecans and let cool for at least 10 minutes before serving. Perfectly crunchy once cooled, serve with a fun drink. We are making this one tonight!
