Cantaloupe & Mint Granita

There's nothing more refreshing than this granita, I promise you. With summer winding down cool temperatures are already rolling in and I'm incredibly excited. One last beach trip before all the fall festivities start. So here's to one last truly summer treat before pumpkin season begins! Cheers!


Ingredients:

1/2 cantaloupe, seeds and rind removed
1/2 water
1/4 cup sugar
1 cup fresh mint leaves

Directions:

1. In a saucepan on medium heat add your fresh mint leaves, water and sugar
2. Bring to a boil and remove from heat. Let sit for 30 minutes to 1 hour depending on how strong you want your mint flavor to be
3. Chop up your cantaloupe
4. Once steeped, strain mint leaves and add your syrup to a blender along with the cantaloupe and blend until smooth
5. Add mix to a shallow dish and place in freezer for 1.5 hours
6. For the next 3-5 hours you will be raking the purée with a fork every hour until desired consistency, but don't worry if you don't have the time
7. If working on a tight schedule you can make this treat the day before and 1.5 hours before serving, remove from freezer and rake with a fork until desired iciness, pop back in freezer for at least 15 minutes then serve!
