Chocolate Cake

As opposed to the cake I made last week for my fiance's 30th, this one was incredibly easy and delicious. I never thought I would turn into a person who loves dark chocolate, but here we are! For this recipe I used Ina's Chocolate Beatty Cake and it's awesome. Nice and fluffy and very simple in flavor with a nice pop of salt, exactly what I want in a chocolate cake. I however changed the frosting recipe (I used Italian Nutella) and ended up putting it together in a 6 inch cake ring which makes it kind of rustic. Cheers!


Chocolate Nutella Frosting

1/2 cup Nutella
1/4 good cocoa powder
1/2 pound salted Kerrygold butter
1 large egg yolk
1 teaspoon vanilla extract
1 1/4 cups confectioner's sugar
1 tsp Maldon sea salt (using smoked sea salt really pops in this recipe)

Directions:
1. Using an electric mixer cream your butter until light and fluffy (3 minutes)
2. Add the egg yolk, vanilla and salt, mix thoroughly
3.  Add the rest of your ingredients and mix until fluffy 
4. Wait for your cake to cool completely before you frost!
